Creamy Hemp, Sweet Potato & Lentil Curry

📌 Ingredients

  • 2 tsp olive oil
  • 1/2 red onion, diced
  • 1 tsp grated ginger
  • 4 cloves garlic, chopped
  • 1 tsp curry powder
  • 2 tbsp tomato paste
  • 2 tbsp red curry paste
  • 2 medium sweet potatoes, diced
  • 3/4 cup red lentils
  • 1/2 cup HempCo hemp seeds
  • 1 can coconut milk
  • 1 1/2 cups vegetable stock/broth
  • Salt & black pepper to taste
Optional:
  • Handful of baby spinach
  • Fresh coriander, chopped

Equipment:

  • Large pot or Dutch oven

📌 Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onions and cook for 2-3 minutes, stirring often, until softened.
  2. Add the ginger, garlic, and curry powder. Cook for another minute, until fragrant.
  3. Stir in the tomato paste and red curry paste until well combined.
  4. Add the diced sweet potatoes and red lentils. Cook for 30 seconds, stirring constantly.
  5. Pour in the coconut milk and bring to a boil. Cover and reduce heat to low. Simmer for 15 minutes.
  6. Stir in the vegetable broth and season with salt and pepper. Cover and simmer for an additional 15 minutes, or until the lentils are tender and the sweet potatoes are soft.
  7. Stir in the hemp seeds (and optional spinach) until wilted.
  8. Serve warm over rice, quinoa, or cauliflower rice. Garnish with chopped coriander.

Tips:

  • For a spicier curry, add a pinch of cayenne pepper or a chopped chilli pepper along with the garlic and ginger.
  • To make this recipe even heartier, add a can of chickpeas along with the sweet potatoes and lentils.
  • This curry is even better the next day! Leftovers can be stored in the refrigerator for up to 4 days.
