Creamy Miso, Hemp & Coconut Butter Beans

This simple one-pan dish is perfect for cosy dinners, Sunday brunches, or any night you’re craving something warm and nourishing. Packed with butter beans, miso, and creamy coconut milk – and boosted with Aussie-grown hulled hemp seeds – it’s comforting, satisfying, and totally delicious.
Why Hemp?

Serves: 2–3 (as a main) or 4 (as a side)

📌 Ingredients

  • Olive oil
  • 1 onion, diced
  • 2 x 400g tins butter beans (including liquid)
  • 1 x 400g tin full-fat coconut milk
  • 2 tbsp hulled hemp seeds
  • 1 tbsp white miso paste
  • Salt & pepper
  • 100g baby spinach
  • 1 handful fresh dill
  • Juice of ½ lemon
  • 6 slices of toasted sourdough or crusty bread, to serve

📌 Directions

  1. Cook the onion: In a large pan over medium-low heat, drizzle a little olive oil and add diced onion. Cook for 6–8 minutes, stirring often, until soft and translucent – but not browned.
  2. Add the beans: Tip in both tins of butter beans with their liquid. Increase the heat and let them simmer for 7–10 minutes, or until most of the liquid has reduced.
  3. Stir in the coconut cream & miso: Scoop the thick cream from the top of your coconut milk can (reserve a little for topping later) and add it to the pan. Stir in the miso paste and a good crack of black pepper. Let simmer gently for a minute.
  4. Add hemp seeds & spinach: Stir in hemp seeds and baby spinach. Cook until the spinach has wilted and the sauce is creamy. If the mixture seems too thin, cook it a little longer to reduce.
  5. Finish with lemon & dill: Chop most of the dill (save a few sprigs for garnish) and stir it into the pan with the lemon juice. Taste and adjust seasoning with salt and pepper.
  6. To serve: Remove from heat and top with remaining dill, a drizzle of olive oil, black pepper, and dollops of leftover coconut cream. Serve warm with toasted bread for dunking.
Tips:
  • Add a soft-boiled egg or grilled mushrooms for extra protein
  • Great as a side with grilled fish or tofu
  • Leftovers? Store in the fridge for up to 2 days and reheat gently
