Easy Hemp Seed Granola

A crunchy, nutty homemade granola packed with almonds, walnuts, pecans, pumpkin seeds, coconut and hulled hemp seeds. Lightly sweetened with maple syrup and Medjool dates, it’s a beautiful everyday breakfast topper or wholesome snack to keep on hand.

The hulled hemp seeds add a lovely nutty flavour and extra plant-based goodness, making this granola as nourishing as it is delicious.

Cook time: 60–65 minutes
Makes: Approx. 6 cups

📌 Ingredients

  • ¾ cup raw almonds
  • ½ cup raw pumpkin seeds
  • ½ cup raw pecans
  • 1 cup raw walnuts
  • 1 cup unsweetened coconut, desiccated, shredded or flakes
  • 1 cup hulled hemp seeds
  • 2 tbsp chia seeds
  • ⅓ cup melted coconut oil
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • ¼ cup maple syrup
  • Pinch of sea salt
  • ½ cup pitted and chopped Medjool dates

📌 Directions

  1. Preheat your oven to 120°C and line a large baking tray with baking paper.
  2. Add the almonds, pumpkin seeds, pecans and walnuts to a food processor. Pulse a few times to roughly chop the nuts and seeds. Be careful not to over-process — you still want plenty of chunky pieces for crunch.
  3. Transfer the nut mixture to a large bowl. Add the coconut, hulled hemp seeds, chia seeds, melted coconut oil, vanilla, cinnamon, maple syrup and sea salt.
  4. Stir well until everything is evenly coated.
  5. Spread the granola mixture in an even layer across the lined baking tray.
  6. Bake for 35 minutes, then remove from the oven. Add the chopped Medjool dates and give the mixture a good stir.
  7. Return to the oven and bake for another 25–30 minutes, or until the granola is golden and fragrant.
  8. Remove from the oven and allow to cool completely on the tray. The granola will become crunchier as it cools.
  9. Once cooled, transfer to an airtight jar or container.

Serving Tip

Enjoy with yoghurt and fresh fruit, sprinkle over smoothie bowls, or eat by the handful as a crunchy snack. For extra crunch, store your granola in a sealed jar in the fridge.
