📌 Ingredients

  • 3 cans chickpeas, drained and rinsed
  • ½ cup HempCo hulled hemp seeds
  • 1 cup packed fresh chopped coriander
  • 1/2 cup chopped red onion
  • 6 cloves garlic
  • 1/2 cup chopped sun-dried tomatoes
  • 1 1/2 Tbsp ground cumin
  • 1/2 tsp turmeric
  • Salt & pepper to taste
  • 1-3 Tbsp tahini
  • Olive oil for cooking
Equipment:
  • Food processor or high-powered blender
  • Large bowl
  • Skillet or grill

📌 Directions

  1. Pulse: In a food processor, combine coriander, onion, garlic, and sun-dried tomatoes. Pulse until finely chopped.
  2. Blend: Add half of the chickpeas, cumin, turmeric, salt, pepper, and tahini to the food processor. Blend until well combined, scraping down the sides as needed. Add the remaining chickpeas and hemp seeds, and blend until a thick, slightly chunky paste forms. This may take 4-5 minutes. If the mixture seems too dry, add more tahini or a splash of water.
  3. Chill: Transfer the mixture to a bowl, cover, and refrigerate for 30 minutes to 1 hour to firm up.
  4. Shape: Divide the chilled mixture into 4-6 equal portions and gently form into patties.
  5. Cook: Heat olive oil in a skillet over medium heat or preheat your grill. Cook the patties for 5-7 minutes per side, or until golden brown and heated through.
  6. Serve: Enjoy your Hemp & Chickpea Burgers on their own, with your favourite toppings, or on a bun with all the fixings!
Tips:
  • For extra flavour, add a pinch of smoked paprika or a dash of hot sauce to the mixture.
  • To make the burgers ahead of time, shape the patties and store them in the refrigerator for up to 24 hours or freeze for later use.
