Hemp-Crusted Roasted Cauliflower with Green Tahini

Hemp-Crusted Roasted Cauliflower with Green Tahini

Hempco LogoMo

Who said cauliflower had to be a side dish? This week’s hemp recipe turns the humble cauliflower into a golden, nutty centrepiece, finished with creamy green tahini and a generous scattering of hulled hemp seeds.

Roasted whole until tender, this dish is simple enough for a weeknight dinner but beautiful enough to serve as part of a shared table. The hemp seeds add a lovely nutty flavour and texture, pairing perfectly with the smoky spices, sweet maple glaze and fresh herb tahini.

Serves: 4
Prep time: 10 minutes
Cook time: 60–65 minutes

📌 Ingredients

  • 1 medium cauliflower
  • 3 tbsp extra virgin olive oil
  • 1 tbsp maple syrup or honey
  • ½ tsp smoked paprika
  • ½ tsp ground cumin
  • 1 garlic clove, crushed
  • Sea salt and black pepper, to taste
  • 3 tbsp hulled hemp seeds

Green Tahini Sauce

  • ¼ cup tahini
  • Juice of ½ lemon
  • A good handful of parsley and coriander
  • 1 small garlic clove
  • 1 tbsp hulled hemp seeds
  • 2–4 tbsp water
  • Salt and pepper, to taste

To Serve

  • Extra hulled hemp seeds
  • Fresh herbs

📌 Directions

  1. Preheat your oven to 200°C fan-forced and line a baking tray with baking paper.
  2. Trim the cauliflower leaves, keeping the cauliflower whole.
  3. In a small bowl, mix together the olive oil, maple syrup or honey, smoked paprika, cumin, crushed garlic, salt, pepper and hulled hemp seeds.
  4. Rub the mixture thoroughly over the cauliflower, making sure it is well coated.
  5. Place the cauliflower on the lined baking tray. Cover loosely with foil and roast for around 40 minutes.
  6. Remove the foil and roast for another 20–25 minutes, or until the cauliflower is golden on the outside and tender through the centre.
  7. To make the green tahini, add the tahini, lemon juice, herbs, garlic and hulled hemp seeds to a blender or small food processor.
  8. Blend until smooth, adding water a little at a time until you reach a creamy, pourable consistency. Season with salt and pepper to taste.
  9. Spoon the green tahini over the roasted cauliflower.
  10. Finish with an extra scattering of hulled hemp seeds and fresh herbs before serving.

Why Add Hemp?

Hulled hemp seeds work beautifully in this recipe because their mild, nutty flavour complements both the roasted cauliflower and creamy tahini. They also add plant-based protein, healthy unsaturated fats and essential amino acids, helping turn a simple vegetable dish into something more satisfying and nourishing.
