📌 Ingredients

Crust:
  • 1 cup walnuts
  • ½ cup HempCo hulled hemp seeds
  • 1 cup shredded coconut or coconut flakes
  • 1 cup pitted dates
  • 1 teaspoon vanilla extract
  • Splash of water
  • Pinch of sea salt
Lime Layer:
  • 2 ¼ cups raw cashews
  • ½ cup lime juice
  • ¼ cup maple syrup
  • 2 teaspoons vanilla extract
  • Zest of 1 lime
  • ⅓ cup coconut oil, melted
  • Shredded coconut or coconut flakes, for garnish
Equipment:
  • Food processor or high-powered blender
  • 8x8 inch freezer-safe pan
  • Parchment paper

📌 Directions

  1. Soak: Place cashews in a bowl of water and let them soak overnight.
  2. Make the crust: Add walnuts, hemp seeds, coconut, dates, vanilla extract, water, and salt to a food processor or blender. Pulse until a sticky dough forms.
  3. Press: Press the crust mixture evenly into the bottom of a parchment-lined 8x8 inch pan.
  4. Make the lime layer: Drain the soaked cashews and add them to the food processor. Blend until completely smooth and creamy.
  5. Flavour: Add the lime juice, maple syrup, vanilla extract, and lime zest to the cashews. Blend until well combined and smooth, adding the melted coconut oil halfway through.
  6. Assemble: Spread the lime mixture evenly over the crust.
  7. Garnish: Sprinkle with additional shredded coconut and lime zest.
  8. Freeze: Cover the pan with foil and freeze for at least 3 hours, or until the bars are firm.
  9. Enjoy: Cut into squares and savour the zesty, tropical goodness!
Tips:
  • For a richer lime flavour, add an extra tablespoon of lime juice to the filling.
  • If you don't have a food processor, a high-powered blender can be used, but you may need to scrape down the sides occasionally to ensure everything is well combined.
