  • 4 mini cucumbers (2 ½ cups), sliced thin
  • 1 cup pomegranate arils
  • ¼ cup hulled hemp seeds
  • ¼–½ cup red onion, sliced thin
  • 2 cups finely chopped curly kale
  • 3 tablespoons finely chopped fresh mint

Vinaigrette Ingredients

  • ¼ cup red wine vinegar
  • 1 tablespoon + 1 teaspoon pure maple syrup (adjust to taste)
  • 2 tablespoons tahini
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
