đź“Ś Ingredients

  • 1 cup Baby spinach
  • 2 Carrots, large
  • 4 large cloves Garlic, chopped finely
  • 1 tbsp Ginger grated fresh ginger
  • 1 Lemon, Juice
  • 1 Red capsicum
  • 1 1/2 cups Red lentils
  • 1 Yellow onion diced
  • ½ cup hulled hemp seeds
  • 1 can Coconut milk, unsweetened
  • 2 tbsp Tomato paste
  • 3 cups Vegetable broth
  • 1 Black pepper
  • 2 1/2 tsp Curry powder
  • 1/4 tsp Red pepper flakes
  • 1 tsp Sea salt
  • 1 tsp Turmeric
  • 2 tbsp Coconut or olive oil
  • 1 tsp Cumin

đź“Ś Directions

  1. Saute garlic, onion and ginger
  2. Add in diced carrot and capsicum
  3. Add remaining ingredients (aside from spinach and hemp seeds) and bring to a low boil.
  4. Cover and let simmer for 20-25 minutes or until it is your desired consistency.
  5. Add spinach and hemp seeds during the final minute
  6. Serve with rice.
