📌 Ingredients

  • 100g soft pitted dates (about 12)
  • 100ml coconut oil
  • 1 tablespoon ground flaxseeds
  • 2 tablespoons water
  • 1 teaspoon almond essence
  • 150g gluten-free oats (1 ½ cups)
  • 3 tablespoons shelled hemp seeds
  • 1 tablespoon pumpkin seeds
  • 3 tablespoons ground almonds
  • 2 teaspoons ground cinnamon

📌 Directions

  • If your dates are not soft, soak them in water for a couple of hours.
  • Melt the coconut oil and blend with the dates, flaxseeds, water, and almond extract until smooth.
  • In a separate bowl, combine the oats, hemp seeds, pumpkin seeds, ground almonds, and cinnamon.
  • Add the blended date mixture to the dry ingredients and mix thoroughly.
  • Line a small loaf tin with baking paper and press the mixture in firmly.
  • Bake at 200°C (400°F) for 20 minutes, or until lightly golden.
  • Let cool completely before slicing and enjoying!

Tip: For extra indulgence, drizzle melted dark chocolate over the cooled bars. 😋
