Lemon, Blueberry & Hemp Loaf

Lemon, Blueberry & Hemp Loaf

Hempco LogoMo

Bright, fresh and perfect for spring, this lemon, blueberry and hemp loaf makes a lovely morning tea or afternoon treat. The hemp isn’t just there for decoration either — hemp flour replaces part of the regular flour, while hulled hemp seeds add a gentle nutty flavour, extra texture and plenty of plant-based goodness.

Finished with a simple lemon yoghurt drizzle, it’s soft, zesty and just sweet enough.

Makes: 1 loaf, about 10 slices
Prep time: 15 minutes
Cook time: 45–55 minutes

📌 Ingredients

  • 180g self-raising flour
  • 50g hemp flour
  • 40g hulled hemp seeds
  • 100g caster sugar
  • 2 eggs
  • 170g Greek yoghurt
  • 80ml light olive oil
  • Zest and juice of 1 lemon
  • 1 tsp vanilla extract
  • 150g fresh or frozen blueberries

Lemon Yoghurt Drizzle

  • 80g Greek yoghurt
  • 1 tbsp lemon juice
  • 1 tsp honey or maple syrup
  • A little lemon zest

To Finish

  • Extra blueberries
  • Extra lemon zest
  • Hulled hemp seeds

📌 Directions

  1. Preheat the oven to 170°C fan-forced. Grease and line a standard loaf tin with baking paper.
  2. In a large bowl, whisk together the eggs, caster sugar, Greek yoghurt, olive oil, lemon zest, lemon juice and vanilla until smooth.
  3. Add the self-raising flour, hemp flour and hulled hemp seeds. Fold gently until just combined.
  4. Add the blueberries and fold through carefully, being mindful not to overmix the batter.
  5. Spoon the mixture into the prepared loaf tin and smooth the top.
  6. Bake for 45–55 minutes, or until the loaf is golden and a skewer inserted into the centre comes out clean.
  7. Allow the loaf to cool in the tin for around 10 minutes, then transfer to a wire rack to cool completely.
  8. To make the drizzle, mix together the Greek yoghurt, lemon juice and honey or maple syrup until smooth.
  9. Once the loaf is completely cool, spoon the yoghurt drizzle over the top.
  10. Finish with a little extra lemon zest, a few blueberries and a scattering of hulled hemp seeds.

Why Add Hemp?

Hemp flour works beautifully in baking when used alongside regular flour. It brings a slightly earthy, nutty flavour while adding extra plant-based protein and fibre.
