Moroccan Hemp & Chickpea Stew

📌 Ingredients

  • Drizzle of extra virgin olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, pressed
  • 1 tablespoon harissa paste or powder (adjust to taste)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 2 cans chickpeas, drained and rinsed
  • 2 cups chopped pumpkin
  • 2 tablespoon Margaret River Hemp Co. Hulled Hemp Seeds
  • ½ medium cauliflower, cut into bite-size florets
  • 2 cans diced tomatoes
  • 1½ cups vegetable broth
  • Salt & pepper to taste
  • Juice of 1 lemon
  • Fresh coriander

📌 Directions

  • In a large pot, sauté the chopped onion and garlic in olive oil until softened and fragrant.
  • Stir in the harissa paste, cumin, and ground coriander. Sauté for another 2 minutes, allowing the spices to bloom.
  • Add the chickpeas, cauliflower, pumpkin, diced tomatoes, vegetable broth, and a generous pinch of salt and pepper.
  • Bring to a simmer, then reduce heat and cook for approximately 20 minutes, or until the vegetables are tender and the flavours have melded.
  • Stir in the Margaret River Hemp Co. Hulled Hemp Seeds, allowing them to warm through.
  • Remove from heat and squeeze in the fresh lemon juice.
  • Garnish with a sprinkle of fresh coriander.
  • For an extra touch of creaminess, swirl in a dollop of your favourite yogurt or coconut yogurt.
  • Serve warm with fluffy couscous or warm pita bread for dipping.
