Raspberry, Hemp & Coconut Slice

A lush little no-bake treat with layers of rich cacao, creamy coconut, tangy raspberry chia jam and dark chocolate. The hulled hemp seeds add a beautiful nutty flavour to the base, making this slice feel a little bit wholesome and a lot delicious.

Perfect with an afternoon cuppa, packed for a picnic, or kept in the freezer for those moments when only chocolate will do.

Set time: 1–1.5 hours
Makes: 12–16 slices

📌 Ingredients

Base

  • ¼ cup cacao powder
  • ½ cup almonds
  • ½ cup hulled hemp seeds
  • 15 Medjool dates, pitted
  • Pinch of salt

Coconut Layer

  • 1 cup shredded coconut
  • ½ cup melted coconut butter
  • 1 tsp vanilla
  • 2 tbsp rice malt syrup

Berry Jam Layer

  • 1½ cups raspberries, fresh or frozen
  • 1½ tbsp chia seeds
  • 1 tbsp lemon juice
  • 2 tbsp water
  • 4 tbsp melted coconut oil

Chocolate Layer

  • 150g 85% dark chocolate
  • 1 tbsp coconut oil
  • ¼ cup shredded coconut

📌 Directions

  1. Line a rectangular baking tray with baking paper and set aside.
  2. Add all berry jam ingredients to a small saucepan over medium heat. Stir gently until the raspberries have softened and the mixture is well combined. Place in the fridge for 10 minutes to cool.
  3. Add all base ingredients to a food processor and blend until the mixture becomes sticky and holds together. If your food processor needs a little help, add the dates one at a time.
  4. Press the base firmly into the lined tray using clean hands or the back of a spoon. Place in the fridge while you prepare the next layer.
  5. Wipe out the food processor, then add the coconut layer ingredients and blend until combined. Spread evenly over the chilled base.
  6. Pour the cooled raspberry jam over the coconut layer, then place the tray in the freezer for 15–30 minutes to firm up.
  7. Melt the dark chocolate, then stir through the coconut oil and shredded coconut.
  8. Pour the chocolate mixture over the jam layer and gently spread it out with a spatula.
  9. Place the slice back in the freezer for around 1 hour, or until set.
  10. Slice and serve. For cleaner cuts, warm a sharp knife under hot water, dry it, then slice.

Serving tip

Keep this slice stored in an airtight container in the fridge or freezer. It’s especially good served slightly chilled, when the chocolate has a crisp snap and the raspberry layer is still beautifully soft.
