Raw Apricot, Hemp & Nut Bars

Indulge in a guilt-free delight with these Raw Apricot, Hemp & Nut Bars. Packed with wholesome ingredients like dried apricots, nuts, and hemp seeds, these no-bake bars are a perfect energy boost. Hemp seeds are a nutritional powerhouse, rich in protein, omega-3 and omega-6 fatty acids, and fibre.

đź“Ś Ingredients

  • 200g dried apricots, plus extra for decoration
  • 4 tbsp maple syrup
  • 3 tbsp hemp seeds
  • 100g coconut oil
  • 200g 7oz oats
  • 2 tbsp ground ginger
  • 60g hazelnuts
  • 60g pistachios
  • 60g pumpkin seeds
  • 80g dark chocolate
  • Can replace nuts with what is nuts are available in your cupboard:)

đź“Ś Directions

  • Prep the Apricots: Soak dried apricots in hot water for 5 minutes to soften. Drain and add to a food processor with maple syrup and coconut oil. Process until smooth.
  • Combine Dry Ingredients: Add oats and ginger to the food processor and pulse until combined. Transfer to a mixing bowl.
  • Mix it Up: Roughly chop nuts and add to the bowl with hemp and pumpkin seeds. Stir until well combined.
  • Assemble the Bars: Line a 7” square tin with baking paper. Pour the mixture into the tin, level the top, and decorate with apricots.
  • Chill: Refrigerate for 2 hours to set.
  • Chocolate Dip: Melt dark chocolate and dip the ends of the bars. Place on baking paper to cool.
  • Enjoy: Store in an airtight container in the refrigerator for up to 1 week.
