Serves: 4
Makes: Approx. 10–12 fritters
Prep time: 20 minutes
Cook time: 15–20 minutes

📌 Ingredients

Fritters

  • 500g sweet potato, peeled and coarsely grated
  • 1 x 400g tin chickpeas, drained and lightly crushed
  • ½ small red onion, finely chopped
  • 2 eggs
  • 60g hulled hemp seeds
  • 50g plain flour
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • ½ tsp sea salt
  • Freshly cracked black pepper, to taste
  • 2 tbsp chopped coriander or parsley
  • Olive oil, for cooking

Avocado Lime Yoghurt

  • 1 ripe avocado
  • 120g Greek yoghurt
  • Juice of 1 lime
  • Small handful of coriander
  • Pinch of salt
  • Black pepper, to taste

To Serve

  • Fresh salad leaves
  • Extra hulled hemp seeds
  • Lime wedges, optional

📌 Directions

  1. Place the grated sweet potato into a clean tea towel and squeeze firmly to remove as much excess moisture as possible. This will help the fritters hold together and become beautifully crisp.
  2. Transfer the sweet potato to a large bowl. Add the chickpeas, red onion, eggs, hulled hemp seeds, flour, cumin, smoked paprika, herbs, salt and pepper.
  3. Mix well until everything is evenly combined.
  4. Using your hands, shape the mixture into approximately 10–12 small patties.
  5. Heat a little olive oil in a large frying pan over medium heat.
  6. Cook the fritters in batches for around 3–4 minutes on each side, or until golden, crisp and cooked through.
  7. Transfer to a plate lined with paper towel while you cook the remaining fritters.
  8. To make the avocado lime yoghurt, add the avocado, Greek yoghurt, lime juice and coriander to a bowl or small blender.
  9. Mash or blend until smooth and creamy, then season with salt and pepper to taste.
  10. Serve the fritters warm with a generous spoonful of avocado lime yoghurt, fresh salad leaves and an extra sprinkle of hulled hemp seeds.

These fritters are also great served with a simple tomato and cucumber salad, or tucked into wraps with greens and extra avocado yoghurt. Leftovers can be kept in the fridge and reheated in a frying pan or oven to bring back their crisp edges.
