📌 Ingredients

  • 3 cups beetroot, cubed
  • 3 cups pumpkin, cubed
  • 1/2 red onion, thinly sliced
  • 2-3 handfuls leafy greens (spinach, arugula, kale, parsley - choose your favourite!)
  • 1/2 cup Margaret River Hemp Seeds
  • 1 avocado, optional (for extra creaminess)
For the Mustard Dressing:
  • 1.5 tbsp brown mustard or Dijon mustard
  • 1.5 tbsp lemon juice (or apple cider vinegar)
  • 1 tbsp honey or maple syrup
  • Pinch of sea salt and ground black pepper
  • 1 tbsp chia seeds (for thickening)

📌 Directions

  • Preheat your oven to 180°C. Line a baking tray with baking paper.
  • Toss the cubed pumpkin and beetroot with olive oil, salt, and pepper. Spread them evenly on the prepared baking tray.
  • Roast for approximately 25 minutes, or until tender and slightly golden.
  • While the vegetables roast, prepare the dressing. In a small bowl, whisk together mustard, lemon juice (or apple cider vinegar), honey (or maple syrup), salt, pepper, and chia seeds.
  • Assemble the salad! In a large bowl, combine the roasted vegetables, leafy greens, and hemp seeds.
  • Drizzle with the prepared mustard dressing and toss gently to combine.
  • Top with sliced avocado (optional) and enjoy
